Companies that are certified organic aren’t always delivering organic products in an organic way. Look for extra arguments and facts on your brands like country-of-origin, certifier name, are there more than 1 certificate and so on…

This might not impact you directly as you can buy it of course. Producing beans in this way takes more than a year, 18 months, or more to be exact from the plants.

WHAT IS ORGANIC PROCESSING?

Organic processing is all about removing chemicals from your coffee bean and thus making them organic. This doesn’t mean the product is free of chemicals. The remaining chemicals, non-organic materials, aren’t products that will harm you.

Organic processing is done in about 2 ways:

1. Dry processing: this method goes way back and is the oldest one. The cherries are cleaned and placed in the sunlight to dry. From time to time, they are switched to ensure a consistent effect. When the drying is done, the fruit is removed.
2. Wet processing: A more expensive way of processing it. Here the fruit is removed from the cherries before the process of drying. You can’t do this without the proper machines and amounts of water. After the removal of the beans, they’re left in tanks for fermentation. After this, the drying process can start.

Dry processing ensures us from fruity tastes and full-body, while wet processing ensures a cleaner taste, but less body. The latter is not always possible because you need access to water sources.

WHAT IS ORGANIC ROASTING?

Organic roasting is what it is: roasting the organic beans. The roasters roast the beans in a roaster that’s assigned to roast only organic beans and nothing else. This is done to prevent other tastes to be created because of “pollution”.

During this process, there are no chemicals or other stuff added in order to keep it organic. It would be a shame to do so.

The latter exists also: you can decide to roast the beans you’ll get and do this in an organic way. This doesn’t mean you’ll get the certification.

Having a great built-in grinder means you’ll need to have at least a ceramic burr grinder. If you can have a conical burr grinder that’s even better. You don’t want to save on this because a good grinder is key for grinding consistently and thus improving the quality of your brew.

This feature can be important to you. Remember, we’re going for a super automatic machine here, doing the work for it. If you can program it the way you like it and for multiple people so you’re saving time in the future. You can preset your preferences, temperature, the strength of your coffee by the touch of 1 button. Quick and easy!

#5. Ease of using and cleaning

Since we’re talking about automatic machines, we’ll want these to be easy to use and easy to clean. Good maintenance is key to increasing the longevity of the machine. All these things really add up. After we’ve made the selection of our beans, we need to grind them to get maximum flavor out of them. There are a lot of grinders on the market. We’ve narrowed it down to 2 of the same brand: Baratza Encore vs Virtuoso (+).

We will review in-depth, look at different features to give you a good overview of the pros and cons of each grinder. The Virtuoso is a bit more expensive.

BARATZA AS A BRAND

Baratza, pronounced as bah-‘rah-tsa, is a company that was founded in 1999 and is specialized in making grinders for making the best coffee. They have estimated revenue of around 9 million dollars according to Owler. Although the company is very young, it has already made a difference when it comes to grinding your coffee beans.

The thing about Baratza is, they care about customers a lot! Their site is great in reviews and problem-solving (Q&A with videos). They design their grinders to be fixed easily.

BARATZA ENCORE

The Encore is one of the most popular grinders out there, making a lot of people happy. It’s convenient to use.

The Encore is one of the cheaper models and is seen as an entry-level burr grinder. You might think: entry-level? Even so, it delivers a very strong performance and is a durable product. Even if it breaks fast, as said before, Baratza gives tutorials to fix things.

The quality of the grind is great, as it uses a conical burr grinder (steel). Other machines might use another type of grinder, like a blade grinder (can heat up and slice your beans more). Conical burr grinders are very consistent!

It comes with a DC motor and has about 40 grind settings, this means you could grind from very coarse (thick) to very fine, making it suitable for every brew method out there. The range is between 250 and 1200 microns.
This grinder can be used for a lot of brewing methods like the French Press, Aeropress, Pour-over… It’s not a perfect grinder, as some things get through but not as many. Remember, we’re talking about an entry-level machine here.

The machine is made of durable plastic, perfect for daily use. It’s also very compact and won’t take a lot of place in your kitchen.

The Encore has a capacity of 8 ounces of coffee beans, allowing you to grind a lot in 1 run! The bean hopper is transparent.

BARATZA VIRTUOSO+

The Virtuoso+ sounds promising. Virtuoso comes from Latin (Virtus) and signifies that it’s really good in doing the job, in this case: grinding! We’ve to look op to the Virtuoso! The Virtuoso signifies the next step within Baratza. This grinder is mid-level. It’s about $100 more expensive than the Encore.

It comes with 40 grind settings. It contains an M2 burr (40 mm) that allows it to grind more consistently. The range is between 250 and 1200 microns. When you’re going for an espresso, you’ll need that consistent fine grind to maximize your espresso experience. This grinder will give you flexibility with most brewing methods.

The machine also comes with a timer, to give you extra control. It also has a digital display and looks very modern. The machine is housed in (black) plastic and stainless steel. The hopper is transparent.

The Virtuoso+ is an upgrade from the regular Virtuoso. The Virtuoso came on the market in 2005 (see the timeline on Baratza website). Baratza regularly improves its products, based on customers’ feedback. The + version came in 2019 and has a timer and improved visibility of the bin.

FEATURES OVERVIEW: BARATZA ENCORE VS VIRTUOSO +

I know what you’re thinking now, these machines look quite the same from far, what’s the difference? We’ve made a small simple overview of the features. We will discuss them one by one for you.

#1. Price

These machines can differ about $100 in this range. We’ve said it before, the Encore is an entry-level grinder and will be suited for most people. The Virtuoso+ is the next level and thus mid-level. The main differences are the upgraded grinder (M3 vs M2), the materials it’s made of (plastic vs plastic and stainless steel). The speed is higher. The Virtuoso+ has extra small features like a timer and transparent grounds bin and LED lights. Think of it: is it nice to have or must have?

#2. Build (material)

The body of the Encore is made of plastic, that of the Virtuoso+ has also stainless steel. This doesn’t mean that the Encore isn’t sturdy or durable. It’s also made of high-quality materials and is very light in weight.

As with most things, if you handle this with care, you should be just fine. This is no dealbreaker for me, the most important thing is that there’s no plastic where there can be heat and that’s okay here.

The Virtuoso+ has more high-quality metal parts, increasing the potential and also the price.

#3. Bean capacity

The bean capacity of the hopper is the same for both machines. A capacity of 8 ounces means you’ll have about 227 grams of beans and allows you to be able to grind a large batch in 1 run.

#4. Grounds bin

The grounds bin has the same capacity, about 5 ounces or 142 grams of grounds. The Virtuoso+ has a transparent grounds bin, as it was upgraded from the Virtuoso in 2019.

#5. Grind speed

The Virtuoso+ outperforms the Encore by a lot and can do it nearly 2x faster, allowing you to brew more in the same time if needed. The main reason for this is the burr. The Encore has the M3, while the Virtuoso+ has the M2 burr.

#6. Grind settings

They both have 40 settings available to decide the grind size. They both have 40 mm conical burrs and allow you to grind consistently.

These 40 settings are easily adjusted and delete the part of the brewing process where you need to guess. Control is key here when going for a specific brew method.j

As said before, they have a different type of burr grinder (M3 vs M2). The M3, the one from Encore, isn’t very optimal for brewing espresso. It will give you a decent cup but not the standard that’s needed for espresso. Here, the Virtuoso+ is way better and a better fit for multiple purposes, justifying the higher price tag.

#7. Grind Range

The grinders both have a maximum range of 1200 microns, there’s a small difference in the minimal range: the Encore has a range starting from 250 and Virtuoso has a range of 200. This means that the Virtuoso can grind more consistently and is more suited for most brewing methods, like espresso for example.

IS THE BARATZA ENCORE GOOD FOR ESPRESSO?

HOW OFTEN SHOULD I CLEAN MY BARATZA?

As a rule of thumb, we suggest you clean it every month, say every 4 weeks. The darker your beans are, the more you should clean them. A regular cleaning schedule highly increases the lifespan of your Baratza grinder.

HISTORY OF NESPRESSO

We’ve all seen it before, the ads on tv with celebrity George Clooney. The story of Nespresso began in 1959. Around that period, they were testing with coffee pills. They wanted to sell coffee and reduce the amount of work that the consumer has to do when making a coffee. This became soon very popular in households and the workplace.

Eric Favre, a Swiss employee from Nestlé, learned from an Italian barista why the coffee tasted so great on a holiday. He learned, by questioning the barista, that the coffee was aerated multiple times, but shorter. That’s where the story begins.

When I think about scaling, I always think about the profession of a baker, someone who makes desserts. Their job is also to know and measure their ingredients and mix them in some manner and way. The result is always something that you can’t get enough of. That’s the image I have from scaling, measuring things. Since we’re talking about great dessert, we’d like a great cup of coffee along with it. 1 + 1 = 3 right ;)!

The main thing about scales is that most brewers, baristas don’t need them and do it on the spot by their experience, or they use a scoop. Just as we have said before, you can brew perfectly without a scale, the same for a gooseneck kettle. Thermoplan AG is a Swiss company that was founded in 1974 by Steiners. They got into the coffee business in 1995, since then they’ve focused on the production of fully automatic coffee machines.

They’ve developed in 1994 a fully automatic coffee machine, made out of different modules. Since then they’ve kept going. Since 1999, they’re the exclusive supplier for Starbucks for fully automatic coffee machines. In 2007 they claim to have the first automatic coffee machine that can prepare cold milk foam by pressing a button.

WHAT’S THE DEAL WITH STARBUCKS?

So they’ve landed an exclusive contract with Starbucks and their brand got known internationally fast. That’s not bad for a company that existed for about 25 years at the time.

Starbucks and Thermoplan benefited each other and kept growing. Starbucks decided to go with super-automatic coffee machines. Today they mostly use the Mastrena CS2 espresso machine. They were in circulation around 2008. The machine has a huge capacity when it comes to coffee beans, suited for a lot of coffees. There’s a state-of-the-art burr grinder that could grind your beans at a very fast rate. All other features are there as well: steam wand, frothing device, etc…

The company keeps investing in their machines and comes with newer ones. They sell about 3 machines on their website: the Black&White3, the Black&White4, and the Black&White4 compact. There’s no sign of the Mastrena or other coffee makers. That’s because of the deal with Starbucks and other coffee houses. It’s not suited for home usage.

We won’t dive deeper into this debate as we are coffee lovers. There’s always a time and a place for a specific product and Nespresso saves you a lot of time and does the job.

Nespresso is invented by Nespresso and major companies, like Breville, produce these. Don’t think they’re all made by Nespresso itself. There are a lot of Nespresso machines out there, generally, it’s a small pod, with coffee grounds that you’ll have to put into the front of the machine. You must make sure that the water tank is full, put the mug under it, press the button and the machine will do the job. This coffee maker is quite compact and very functional. It won’t take a lot of space on your counter and will give you that powerful shot of Nespresso. It’s very easy to use. It has an industrial design, as with most products of Breville.

There are 2 coffee options: espresso and lungo. The machine heats up in 25 seconds and has a 19 bar pressure pump.

#4. Nespresso Inissia

The Inissia is one of the lightest ones in the Nespresso range. It has an ergonomic handle and is available in multiple colors. There’s a 19 bar pressure pump and heat control system. It also has 2 options: espresso and lungo.

#5. Nespresso Essenza mini

The Essenza mini looks more like a modem, router for wifi from afar but don’t be fooled! This machine can serve you a great cup of coffee. Never judge a book by its cover.

This coffee maker is small and a nice fit for any kitchen countertop. There are 2 options: espresso and lungo. It comes with a 19 bar pressure pump and has a light environmental footprint, meaning it doesn’t waste energy when not needed. After 3 minutes, it has eco-mode on and will switch off after 9 minutes of inactivity.

The Essenza does not detect if there’s an empty water tank and doesn’t heat up very fast. Due to its compact design, the drip tray isn’t removable. It does have, as mentioned before, an automatic shutdown function.

If you want a good single-serve coffee maker, this one might do the job for you.

#6. Nespresso Citiz

The Citiz also has a very nice design and attracts Nespresso and espresso lovers. It comes with 2 modes: espresso and lungo but they’re also reprogrammable. The drip tray can be removed so you can put larger cup sizes under it. There’s also an automatic shutdown function.

The pressure pump has a pressure of 19 bar and it heats up very fast. It doesn’t come with an empty water tank detector.

#7. Nespresso Vertuo

The Vertuo gives you a great brewing experience. It can make up to 5 cup sizes: Alto (14 oz), Coffee (8 oz), Gran Lungo (5 oz), Double Espresso (2.7 oz), and Espresso (1.35 oz). It’s compatible with Nespresso Vertuo Capsules, not the original Nespresso capsules.

It heats up very fast (about 15 seconds) and has a higher water tank capacity (about 40 oz, 1.2 L) and a large used capsule capacity (13 coffee/20 espresso).

Neat is that there’s special technology involved, when using different capsules, automatically adjusting coffee size, temperature, pressure, and brewing time for each type of cup that’s inserted.
